If I’m ever to win Father of the Year, I guarantee it will be because of my insistence upon dessert. It’s pretty much a commitment in my house, thanks to the sweet tooth that’s inhabited my DNA, that no day is over without something sweet to end the dinner. Today was no exception, but I was at a loss for ideas and didn’t have anything in emergency reserves (i.e., frozen-but-ready). Enter the oft-maligned cake mix. I know, it’s a crutch, but when they go on sale I’ll stock up with 3 or 4, because sometimes you just don’t feel like baking you know? Now, since a cake mix is basically the foundation for most cakes and cookies, with a little help from Duncan Hines, I made a very serviceable batch of Snickerdoodles. Ah, the Snickdoodle. Somehow I missed out on this trumped up sugar cookie until my mid 30s, but have tried to make amends by eating them quite often. Below is a recipe that takes about 10 minutes to put together and rewards you with about 2 dozen cookies that are pretty much spot on with the classic method in terms of taste.
